The Thing About Cooking . . .

 

I am an amateur baker and chef. Extremely amateur. I often find a recipe, make it right the first time and then tweak it every other time. Grant you, this idea is all hinged on the concept that I made it right the first time. I am notorious for missing an ingredient or step in the process of looking at recipes. Example: I made mini whoopie pies for the first time yesterday evening and it wasn’t until I started tasting the batter that I realized I missed an ingredient and read my spoons wrong. Yup, that was me. I fixed it, and they came out fine, but that’s just how I roll. I also didn’t read the whole part about adding ingredients in parts, but that’s another story.

The reason I cook as much as I do (besides the awesome women in my family) is because I get bored. The process goes with starting with something simple and then getting bored so instead wanting to try something a little more difficult or that I’ve never tasted before. Example: Wednesday was Pi Day and in celebration I contemplated making a chocolate pie. In the process, I stumbled upon mini chocolate whoopie pies on Martha. Hmm, this satisfies both requirements – pie and trying something I’ve never made before. Check! I think I also want to wow folks if I ever have kids.

I’m not sure what I’ll do with my cooking knowledge right now. I mean besides cooking for myself. Before I could bring the food in to be gobbled up by the boys at work. Now, not so much. I should open up a fakery. Sometimes I wish I could have a virtual fakery, but then people wouldn’t be able to walk in and mmmm at the smells and I wouldn’t be able to decorate. Yes, decorating is important.

For now, I’m destined to be a secret baker I think . . .

Things I Love Thursday!

Oh thursday, you are wonderful! Delightful even! This week has been quick, but I find it to be a good thing in regards to my health. I’m still recovering from this crappy cold/flu thing so endless sleep is still sounding glorious to me. I’m just about over it so long as I can get rid of this stupid head sniffle bologna. It’s so nice and lovely out, all I want is to have my energy back and to go play in the sun. I’m doing a little bit more each day so I’m taking that as a positive sign!

Mary Poppins Tickets ~ I bit the bullet. I wasn’t really planning on it, it just sort of popped into my head. I got a discount on the tickets and the allure of the box seats were calling to me. So I bit the bullet and now my friend and I are going to see the chimney sweeps on Sunday. Secretly, I’m giddy with excitement. Another cultural even, a fun broadway show and songs that make me smile. Oooo la la!

New Hairs ~ There’s few things as fantastic feeling as a new do! Ok ok, there are lots of things that feel fantastic, but by golly that will not be diminishing my sheer joy for new hairs. I love my hair gal, she’s super sweet and flexible beyond belief for my schedule. And she was patient enough to wait with me during a “brief” unexpected delay prior to getting started. What a doll! And now I can feel human and pretty again. Now I can have a foxy day tomorrow. Magnifique!

 Hardy Fuschias ~ I’m secretly in love with this nursery booth at the farmer’s market. They have great prices and beautiful plants. I’m addicted to their $5 hardy fuschia plants. I bought one and then went back for more. Now, I really should plant them . . .

Little Loves . . . 

Red gummy bears. They’re nostalgic.  80 degree weather! It’s so lovely to have warm sunny weather that’s perfect for crops and tops.  Long-time-no-see-friend hugs  Getting over it. Sometimes, you just need to.  Sweet pea bunches  Teriyaki chicken and beef kabobs. I’m in LUV!  My new huge chair. I love the big chair. Sadly though, I have a feeling Boo is using it during the day. Not sure how I feel about that . . .  Tank tops. I may not love my arms right now, but sometimes you need as little clothing as possible.  Learning new things again at work. First it was exchange, now it’s forms. I may not want to do it all, but it’s nice to know.  Head scarves and bandanas  Sidewalk chalk drawings  Feeling clean. There is nothing like a nice shower after feeling all icky.  Chocolate cream pie. I rarely have pie, let alone decadent pie, but this was delicious!  Remembering on pay-day a big expense I had forgotten about while budgeting. Phew! Foxy day tomorrow “No, it’s the hand-job police” Deodorant. I know, it’s a common thing. But really, you should love it too. Scheduling my hotel room for Bend. I’m so excited!!! Now just need to buy my ticket. “I accept that”  Evening talks with Pops on the porch Feeling back to “normal” again

 Sucker Punch. I finally watched it and it was exactly how I hoped.

Things I Love Thursday!

 

Is it friday yet? ‘Cause I’d really like it to be friday. I haven’t been giving my body the proper rest it deserves and now it’s biting back. I think it might be a tea morning. I went to bed waaaay too late again last night and then was treated to the pleasant sounds of the puppydog’s upset tummy starting at 5am. Yum! Poor Boo. Poor Me. Must. Sleep. Ugh. Other than that though things are good. It really needs to warm back up here in Ptown. We got one really good day in the 80’s and then tanked again. It is depressing lol. I want sunshine! I could be awake for sunshine. Well, hopefully you all are drenched in goodness and sunshine this thursday. And love . . .

 Kalhua Brownies & Family Dinners ~ Last night was family dinner night at the gparent’s place. It was so nice to be able to go and relax and talk with everyone. I even made Kalhua brownies for the occasion complete with Kalhua frosting on the side. And I will admit, they came out pretty good. But my favorite thing . . . corn! I’ve had such a hankering for corn on the cob lately like nobody’s business. It really hit the spot.

 Tickety Goodness ~ I finally bit the bullet and bought tickets to the things I’ve been wanting to see this summer. I bought a ticket for Matisyahu at the zoo at the end of July and a ticket for Les Mis at the beginning of August. I’m sooooo excited for Matisyahu, I’ve been wanting to see him live FOREVA. And from what I’ve seen, I think he might be better live. And Les Mis, I think I’m wanting to see it because of nostalgic reasons (I’ve sung the music) and because I didn’t want to regret not going when I had the opportunity. The first box seat in the first row doesn’t hurt too badly either. Hehe. One ticket left to buy though. Still debating on buying a ticket to Pink Martini in Bend at the end of July. I’d really like to stay there again and I loved the last concert. I think the big debate is on whether or not to stay there one night or two. Last time I did one night and it was fun, but felt a little rush. We shall see . . .

Little Loves . . . 

♥ Being in a good place again  Buying a grill! Oh my geez. And now my Dad fixed the side shelves by adding bolts so I’m doubly happy!  Late nights of good clean fun  Perfecting my golf swing and winning ♥ Super 8. So much fun!  Getting back to my budget  Deer crossings  Cooking more at home again   Achieving my credit card goal this month  Sleeping in with Boo  My mom: “It’s ok if you want to do golf balls instead.”  Tackling the endless clothes pile at the foot of my bed finally  Sons of Anarchy. I’ve become addicted. Crap.  Warm summer days heading our way again  Dreaming of wearing scarfs and skirts again  My Dad after telling him of his F-day gift: “Oh geez, how much did that set you back?!” Me: “Nunya . . . Nunya business pops.”  Clean Boo. Who doesn’t love when their dog smells clean?  Pork products on the fly. My family would be so proud.  Learning the difference between platelets and plasma  Contemplating training again. I need to do something with this lifestyle because being a couch potato just don’t cut it  Planning the gun range, kayaking and Seattle this month. Can’t wait!  Family dinners  Kalhua brownies  Don’t think, just do.  Commando  Linen pants. So comfy!  Breaking out my blue wedges again finally  Baby wipes: they smell good, they clean things and now they come in awesome packaging. It’s a trifecta!  A clean sweep this weekend. I really need to finish my house cleaning. I can’t take it anymore!  Peonies, delicious peonies. ♥  Farmer’s markets. I’m definitely going this weekend . . .

Blood, Guts & Golf . . . A Weekend Of Goodness


After work on friday I . . .

Went golfing! Hoorah! I’m really loving the golfing thing right now. It’s something to focus on and have fun with. Not to mention the beautiful scenery, the arm workout and the good-looking men. Confession: I thought it was older gentlemen playing golf. Not so! There’s a wide range of menfolk and this makes it that much better. It’s like a fun bonus! After that I went to go see Super 8 at the movie theater. It was awesome! It’s like a 70’s/80’s era cross between goonies and ET. I highly recommend!

Despite going to bed late, I woke up early Saturday and I . . .

drove to the ‘couv and finally gave blood!!! You don’t even know how delightful it is to be able to say that I was finally able to give blood. It blows my mind that only something like 37% of the population can give yet only 8% do. And there’s so many misconceptions out there! It was so important to me to do this so I’m thrilled I can finally say that. I even got to learn the difference between Platelets and Plasma . . . do you know what the difference is? After everything was said and done and I my cheese-its were eaten, I was surprisingly pooped. So much so, I crashed in bed for four hours. 

When I woke up, I . . .

Was starving!!! I had the choice between lunch time or nap time, I chose nap. By then, my stomach was eating my backbone. So I hopped over for chicken skewers and fruit salad and then hung out with a friend and succumbed to the awesomeness that is Sons of Anarchy. I’m doomed now.

The Next Day . . .

Was father’s day!!! I love my pops mucho. I also love a guy who doesn’t always make a big hubub about it all. I took Boo in for a doggy wash, then had lunch with a friend and despite planning on taking the big man to a movie later, I brought home a new grill thinking that setup would be a synch. Hahaha, yeah right. Such malarkey. I think I said more swear words that afternoon than I have all month. But by golly, I was determined and by 8:30pm and a store run later, I was ‘a grillin’ weiners. Oh yeah. Now I’m addicted!

Can’t wait for more!

 My Little Loves . . .  

 

Being of service  Big chunky rings  Ruffles . . . on my purse.  Finally putting away my excess sheets, blankets and luggage  Just Wright. Hello yummy Common!  Home-made smoothies. I am so happy to be bringing back the blender usage and nummyness  A new scarf and shirt . . . both with blues!  Being able to see my floor again, hehe  Stuffed mushrooms with turkey sausage. Next time I will make them differently, but this was definitely a good start!  Sorting through my to-be-returned pile finally. Sad, but needed. Getting my acceptance email to the food bank garden. Cannot wait!  Mini raspberry sorbet cups and finding Umpqua pints The build-your-own salad bar at the market down the street. This is my new addiction.  Plain cheerios with bananas and blueberries. Well, blueberries in general really.  The Adjustment Bureau. Still.  Watching Rocky & Rocky II finally. I can’t believe there are more. I’m likelier to rewatch Rambo(s) many times over than these, but at least I can check it off the list. Now if only I wanted to watch The Godfather movies . . .  Planting trees with delicious fire boys! What’s that you say, why yes, I’ll be happy to get soaked and muddy and dig in the dirt next to the cute firemen for three hours. Booyah! ♥ Chocolate sorbet, my new obsession  Getting ideas from cutely creative fashion bloggers  Pushing through my swim goal despite jerk face pool users  Wax earplugs. Who knew?!  Working through my tempo money mess. It feels good Game night with the boys ♥ No noodle Chang’s. Definitely a new experience. Breaking my arse getting out of a car. So awesome!  My boozies not falling out in the pool. Trust me, this was a major accomplishment.

Kicking Ass & Taking Names! Errr . . . maybe.

What a weird week. I can only count half this week as being in existence, that’s how not-present I’ve been. My day was spent in mind-numbing boringness of jury duty and waiting to eventually be excused. There’s nothing like feeding the meter and then having to do it again because the leprechaun’s played with the meter and hid my two tickets. And then walking the 6 or 7 blocks after starting out looking half way decent to find out there was a closer lot and oh yeah, you went to the next building and need to be next door. Awesome. At least I got to wear a Juror button all day. It’s the little things in life. But, I think it’s important to look on the bright side, so here’s some awesome goodness I can be happy about:

  • I made my first batch of sweet potato brownies on monday and they were great. I tried again on Tuesday and no bueno. I think I rushed it. I tried again and the outstandingness has returned. I also learned this week that you have to let the brownies cool in order to get them out of the pan in one piece. Good to know!
  • I got to see my moomoo this week and have dinner. And oh yeah, I showed her the Sylvester face and we watched parts of the new Rambo. Because that’s how we roll . . .
  • I made sweet potato fries for the first time ever. And they were yummy.
  • Other than a sandwich (allowable), I’ve had no pasta or bread this week. I’m stickin to it!
  • I made beef stew for the first time this week and it only gets better after sitting a day or two.
  • Finally caught up on dishes. I know it won’t last, but it’s important to celebrate the mini triumph.
  • Tomorrow is friday! Woot woot!
  • Tomorrow I will be on a mission to find a BLT sandwich. I have such a hankering and I will not rest until there is success.
  • Movie date night after work tomorrow
  • Tomorrow is casual day and I get to wear the boots. I don’t know what I find this terribly awesome, but I’ve been really wanting to wear them lately. Might even continue on through the weekend.

Evening O’ Yummy Goodness

I’m not sure I could have asked for a better night! Right now I’m sitting in bed watching The House of Flying Daggers (I forgot how much I love this movie! Absolutely beautiful! When’s the last time you saw a martial arts fight scene in a bamboo forest?) with a happy tummy. Tonight I tried my hand at beef stew and home-made healthier brownies, all from scratch. The beef stew came out great, though took longer than I would have wished . . . or at least my stomach would have wished. But good things come to those who wait and it will be even better tomorrow!

While the stew was a’ cooking I tried my hand at my first brownie recipe. Here’s the sitch: Brownies are unavoidable yummy. Unless your tongue doesn’t work or you have a chocolate problem, there’s no denying it. They’re yummy. They are also 300-something calories and uber rich so justifying them can sometimes become difficult . . . like justifying a tub of ben & jerry’s. With the health consciousness that has become more and more prevalent in society these days, especially in Oregon, there are all sorts of concoctions out there that suggest various alternative ingredients for some of the less health-enthusiastic ones. One of the most common ingredient substitutions is applesauce for butter. But alas, I often find the consistency changes and often is accompanied with a fruity taste which isn’t always desired. So, I was immediately intrigued that this recipe instead called for sweet potatoes and whole wheat flour. I’ve never given sweet potatoes a fair chance, mainly due to their easy confusion with yams, but I am now a convert! I changed the recipe just a scoach here and there and had to leave them in the oven just a bit longer, but oh my heaven. I don’t think I’ve tasted anything so divine in quite some time. I don’t even care that I took them out of the pan too early and so they broke apart a bit. They were still ta da for!

PS – I also found Bulgur tonight. I jumped for joy at actually finding this at the grocery store. It’s a grain that isn’t really used in standard american fare so finding it is a bit of a needle in a haystack. In fact, until today, I’ve never come across a recipe that called for it. Now I’m extra excited for my stuffed shells in April!
